I'm in the middle of a 6 week long plane spotting photography tour including EBACE, and I've noticed that it changes with exposure to a type and whether one can capture it well on film easily or not, I've taken photos of almost 2000 registrations and many different types so far after 13 days and as I peruse what I have taken at the end of every day I often find myself a different type favourite almost on a day to day basis....
Of the aircraft I have photographed I rate the following as aesthetically good looking and photogenic

Caravelle - love the shape of the triangle windows
ERJ-190 - love the shape of the nose!! a perfect one
Boeing 777-300ER - a great ratio between the wings and the fuselage... perfect size!
Boeing 777-200 (all series) - shorter than Boeing 777-300 but about the right size
Boeing 737NG with long winglets- cute one as well
Airbus 340 - winglets with nose are well-balanced
Boeing 747-300/400/800 - it's still better than Airbus 380, beautiful, good ratio.
